The objective of the study was to find an appropriate method to elaborate a silaje from coffee pulp of optimal quality for feeding ruminants, determining the nutritional and organoleptic quality of the silaje at 60 days as an alternative of environmental mitigation to the negative impact caused by the enormous quantities of coffee pulp produced worldwide. In the first phase of the study, the humidity of the fresh pulp (82.1%) was determined, after draining for 14 hours and pressure, low humidity was achieved up to 77.1% humidity with which the silage was made, 60 days later. If the chemical, organoleptic and palatability composition was determined, the results gave a product not suitable for animal feed. The second phase was carried out with the objective of rapidly reducing humidity and avoiding the start of aerobic fermentation and the increase in temperature presented in the runoff. For this, a manual press was made, the fresh pile dehydrated by compression was enlicated and the evaluations were carried out at 60 days. the results were moisture (71.8%) considered ideal for silage, protein (12.6%), ENN (38.17%), the organoleptic characteristics showed coffee pulp dehydrated by compression ensiled suitable for feeding ruminants .
