Abstract
Transformative production units soybeans in the municipalities of La Mesa and Nilo program beneficiaries processing plants Soya secretary of social development of Cundinamarca which is focused on significantly reducing the levels of malnutrition in communities most vulnerable in the department have artisan technology that cannot control any process variable.
This has a direct impact on the physicochemical quality and safety of milk and the mass obtained, which later were used as raw material for the production of bakery products and nutraceutical drinks, according to the problems evidenced the need to establish the feasibility of designing an easy operation team to guarantee the safety and quality of the products obtained.
