Abstract
The problem raised in the project lies in the loss of second and third qualities of Hass avocado (Persea americana), this means that it does not exceed the quality standards to be exported or sold in the market, of which approximately 20% of the harvest remains on the producing farms. This can be used by transforming this fruit into a dairy product, with high nutritional content, which provides vitamins and healthy proteins for the human body.
