Abstract

Passion fruit is a fruit with high agroindustrial potential in the product market. Therefore, the objective of this study was to physically and chemically characterize passion fruit accessions (Passiflora edulis var. Flavicarpa) at the Centro de Formación Agroindustrial, where four accessions were selected: round, oval, small, and large, a total of twelve physical variables were evaluated (fruit diameter, fruit length, fruit weight, fruit firmness, fruit pericarp diameter, pulp plus seed weight, percentage of pulp plus seed, juice weight, juice percentage, peel weight, seed weight, seed index, four chemical variables (Soluble solids, Citric acid, pH, Water activity) and juice yield. The analysis of the results was carried out by analysis of variance with Tukey’s test (p<0.05) and multivariate analysis, principal component analysis (PCA). High variability of phenotypic and agronomic characters of fruits was found in the large, oval, small, and round accessions, with the following figures: juice weight 41.13%, seed weight 39.12%, seed index 37.46%,
fruit pericarp diameter 24.41% and pulp plus seed weight 31.42%. The amount of Brix produced the highest values in the accession categorized as small with 18.05, which showed significant differences in relation to the other accessions. In this sense, these values allow us to determine the potential use of each accession, either for the commercialization of fresh fruit or agroindustrial use.
